I am planning to posses a glass jar vessel with a spirit. The book I have says to check the resistance chart for the jar vessel's resistance but, wouldn't the resistance just be the same as if I were enchanting it, so why can't I use that chart?

The vessel's Object Resistance is the same in both tests, just remember that in possession you're rolling against Object Resistance x2.
