Is it at all possible to Jam a Signal that has a Rating 6 or higher? (Due to the fact that Signal Jammers only go up to rating 6)
Also, are there any rules for Signal interference from weather, heavily dense cities, etc.?

You can make a jamming test to increase the effective rating of your jammer. This fact is only barely alluded to in the basic rules by mentioning that the jamming test (a use of the Electronic Warfare skill) exists.

I think you roll Logic + EWar + Rating for each of the operators of the equipment. My inclination would be to make every net success reduce the loser's rating by 1, with resultant decreases in range. Jamming UWB agile frequency-hoppping encrypted transmissions (or whatever succeeds that as the most undetectable hard-to-jam tech) should be nigh impossible.

I did find nothing except the Jamming specialisation of Electronic Warfare. Everything else is a rating-based comparison.

Ratings can go higher than 6, actually. Its just that a rating 7 is so nova hot mil-spec that you are not likely to see any, and you certainly can't buy it.

Could anyone give me a page number as to where the rules for increasing the Jamming rating with Electronic Warfare would be in the SR4? (Sorry but it is a big book and they some times fragment rules and put them all over the book instead of just one specific place to look)

it never actually comes out and says it. it's really only ever implied, as frank said.
can't seem to find where that reference is though. it is in there though, and it's terribly vague.
(incidentally, the jammers in the table in gear go up to rating 10 in my copy of the book... not sure what you're using. of course, that would be an availability 30 item, which is quite ridiculous, and hard to find).

Out of curiosity, things that produce high Signal ratings tend to be big, is this the same case for Jammers as well? (Rating 7+ Jammers need to be mounted on vehicles and etc?)

No in 2070 they already have things that today are mounted on large vehicles.

I would like clarity on the rule of increasing a jammer rating with the EW test.
Incidentally as a houserule we rule that the jammer vs. signal+ECCM (or equivalent) are compared with the jammer reducing the signal by the rating of the jammer buffered by the ECCM (if active.) That way a low rating jammer can still cause some havoc by reducing signal ranges. Seemed wonky that the jammers were all or nothing affairs.

The given mechanics result in an effective signal rating of (Signal+ECCM-Jammer Rating), with Signal as an upper boundary of course.
The structure of the jamming test is not known. (@Jaid: The only reference I could find was the spec on EW, as I wrote. Is there more?)
You should start with a base of Logic+Electronic Warfare. I´d cap hits at the Jammer Rating, seems powerful enough. Remember boys and girls, noone messes with GridSec twice.

yes. if you want to find it, you'll notice it tells you to make the test when using a jammer, but doesn't actually say what effect the test has at all.
