If you look at the vid, the swordsman had his eyes closed near the end of the swing/cut. Impressive, but I think it's more of a trained reaction to that if he consistently swings his sword at a set height at a set time, the pellet will impact & cut itself on the sword. He's not swinging the sword at the pellet, he's bringing the sword up to where the pellet will impact it & cut itself.
Still an impressive feat to bring the blade up to the height/location by the time the pop of the gun is heard.
