What do I need the force rating of an illusion spell for? Iirc the target has the chance to resist and each nit hit gained by the spellcaster imposes a -1 for the target. So what's the spell force good for?

Force will cap the Hits that you can get on any spell, so you will need a higher Force spell to have more hits (excepting on Edge use...). For Physical Illusions, you need to overcome Object Resistance, which means a threshold of 4-6.
Many Illusions also use the hits from the Spellcasting test as a threshold for Perception.

Maximum hits by the Spellcaster, and difficulty to Counterspell
The Force of a Spell is the maximum hits the spellcaster can have the Spellcasting Test
Counterspelling attempts resist the same amount of drain as the original casting.
