What kind of knowledge skills are suitable for a character involved with Tamanous' organlegging activities?

Might I suggest:
Electronics(Cryogenics) - s/he'll need to keep the merchandise cool
Chemistry(Pharmaceuticals) - would you like a side of Roofies with that Mickey Finn?

Biotech (specializations follow)
Surgery helps to properly remove those still-warm organs without damaging them.
Triage - which organs are still salvagable
Forensics - cause of death (again, which organs are still good. Sometimes, it's real obvious, i.e., 9mm migraine)
Electronics (cyberware) - what is this chrome thing hanging off his head? Is it worth money? How do I take it out?
Stealth (Forensics) - how not to leave behind incriminating evidence
Intimidation/Negotiation - How to give off that creepy organlegger vibe. Also, to keep snoopers away, and negotiate, both of the rights to parts, as well as appropriate pricing.
Some of these skills can be broken down into knowledge skills, too (Cyberware - "what is it? Is it expensive?" but not "how do I take it off?"). I also see negotiation being a very important skill. You want to get the best deals from parts that you can, both from the desperate trying to sell off their chummers, as well as selling this slightly-used heart to the local organ-bank. Stealth is also high on the list, since you want to be in and out fast and unseen, as well as being able to lurk around the edges of shootouts and various street violence without being a target yourself. How else do they show up so fast?
For cyberware, I'd consider things such as:
Hand razors - quick scalpels, as well as self-defense. Dikoted for added precision (if GM allows)
Headware mem - Handy reference guides, inventory, etc
Radio or phone - to make a deal fast, and on the move
reflex enhancement - duh
VCR - depends on the style in which you make pickups/dropoffs, etc.
cybereyes - thermo can be a valuable aid in determining age of parts
a cyberhand/arm can hold field surgery kits, coroner's kits, etc.
dermal armoring (dealer's choice) - added survivability if you start taking fire while working
GPS/Orientation system - to better plan your escape routes
Most of that cyber package is for the organ-legger on the go. I tend to see such groups as being highly mobile, and very high-speed. If they're reasonably financed, they'd have cyberware packages dedicated to moving as fast as possible into an area under the lightest load (hence, lots of built-in tools), doing the job, and evacing. The low-weight of implanted gear lets the individual cart off more bits and pieces rather than toting around bags of gear. If the individual or group isn't going to be lurking on the edges of an engagement, avoiding contact, then moving in, cleaning up, and bugging out, then the above list isn't quite right.

Enhanced articulation and microscopic vision enhancements would both be very useful.
Also, if you plan to associate with ghouls, Knowledge: VITAS-III would be a good idea so you know how to avoid problems.
Remember, you can sell smashed up, useless organs as food.

an extensive knowledge of Seattle gangs will also be useful, because much of your stock will be found in the Barrens. very possibly, you can avoid doing the dirty work yourself by using gangs to gather bodies for you--that limits your public exposure, making it less likely that you'll be caught.
